Recipe for One glass


Ingredients

Sicoly


For the dried

pear slices


ingredients :

  • 1 SICOLY® fresh pear
  • 1 part Water
  • 1 part Sicoly® lemon juice 100 %
  • 1 part Sugar

process :

Cook all ingredients in a bain-marie and leave to infuse for 30 minutes.

Leave to cool down and place in the fridge for 24 hours. Filter.

For the cocktail


ingredients :

  • 3 cL Pear brandy
  • 2,5 cL Sicoly® lemon juice 100 %
  • 6 cL SICOLY® Williams pear purée
  • 1 cL Vanilla syrup
  • 1 cL Cane sugar syrup
  • 2 cL Egg white

process :

Pour all the ingredients in the small part of the shaker.

Shake a first time, without ice cubes, to emulsify the cocktail. Shake a second time to cool down the cocktail.

Pour into a glass filled with ice cubes.

Finishes


Sprinkle a spoon of sugar on the top of the glass. Burn with a flamethrower to create a small caramel layer.

Decorate with one of more slices of dried pears.
