Our organic blood peach purée is made from organic fruit, grown in the orchards of our own cooperative producers, in a 50 km radius from our buildings.
According to the crops, some additional supplies can be made from other partners in France (Rhone Valley mainly).

The blood peach (or wine peach) is a local fruit that is deeply rooted in the farming tradition of our Region.
Its creation dates back to more than 150 years ago when farmers planted peach trees into their vineyards to help them fight some specific type of pest. The specific soil and the proximity to the vines gave a deep red peach, reminding the colour of wine, very sweet and juicy.

The peaches used in our purée are selected according to stringent quality criteria and picked at optimal ripeness, the moment when they are the sweetest and most colourful, to create a high gustatory quality purée.

The recipes and manufacturing process are fitted to each particular fruit to preserve their own particularities and offer frozen fruit and juices with very authentic taste, the closest possible to the fresh fruit.

Fruits are first crushed and sieved while fresh, to ensure maxium flavour, in our own production facilities in France.

The fruit pulp is then de-aerated to prevent any risk of micro-oxidation and preserve the natural colour of the fruit. The frozen purée then undergoes a heat treatment, with a specific ultra-fastprocess (ohmic heat treatment) to preserve all the organoleptic qualities ofthe fresh fruit: taste, colour, etc.
This step is also of paramount importance as it allows us to guarantee the consistency and shelf-life of our products, by reducing the bacterial charge, without added sugar.

SICOLY® unsweetened* frozen vine peach purée offers a complete liberty of creation to all chefs worldwide, allowing them to adjust the sugar content of their recipes as they please.

The frozen blood peach purée can be used in both sweet (pastries, ice-creams, sorbets, chocolates, etc.) and savoury recipes.

It can also be used in the beverage industry to create delicious cocktails, beers or other drinks.
