Our unsweetened* frozen "Noir de Bourgogne" purée is made form fruits sourced in France.

The "Noir de Bourgogne" variety has been used for generations in the Burgundy gastronomy for the distillation of liquors or in traditionals jams and pastries thanks to its strong aromatic power. SICOLY® has selected this variety to offer you a premium frozen blackcurrant purées for authentic and flavourful creations.

The "Noir de Bourgogne" blackcurrants used in our purée are selected according to stringent quality criteria and picked at optimal ripeness to create a high gustatory quality purée.

The recipes and manufacturing process are fitted to each particular fruit to preserve their own particularities and offer frozen fruit and juices with very authentic taste, the closest possible to the fresh fruit.

Fruits are first crushed and sieved while fresh, during the summer, in our own production facilities in France.

The fruit pulp is then de-aerated to prevent any risk of micro-oxidation and preserve the natural colour of the fruit. The frozen purée then undergoes a heat treatment, with a specific ultra-fastprocess (ohmic heat treatment) to preserve all the organoleptic qualities ofthe fresh fruit: taste, colour, etc.
This step is also of paramount importance as it allows us to guarantee the consistency and shelf-life of our products, by reducing the bacterial charge, without added sugar.

The frozen blackcurrant purée can be used in both sweet (pastries, ice-creams, sorbets, chocolates, etc.) and savoury recipes (sauces, etc).

It can also be used in the beverage industry to create delicious cocktails,beers or other drinks.
